You might think of Gozleme as a Turkish version of the French crepe - that would be close but incorrect. It all starts with a ball of pastry, which is rolled out into a thin circular sheet with an oklava (Turkish rolling pin), sprinkled with the filling and then tossed on the griddle. While cooking, the dough becomes speckled with dots resembling eyes. While the process may seem basic, there is surprising artistry and skill involved.
